Planted on the rolling hills of the Madonna Vineyard in Carneros, the Cabernet grapes have southern exposure. This southern influence provides maximum sun exposure for peak flavor maturity. The fruit is crushed and fermented in stainless steel tanks. After fermentation the wine is pressed and transferred into small oak barrels. It is then aged for 18 - 24 months.
On the palate the Cabernet has a structured mouth feel with soft tannins and herbal undertones. Compliments filet mignon, pork tenderloin, and hearty tomato based pasta dishes.
