Dessert wines are designed with something sweet in mind, and are produced using extra sweet grapes. Fermentation is stopped early, either by cooling or adding brandy, to leave remaining grape sugar and a typical alcohol content of 15% to 18% by volume. Sometimes served in smaller glasses, dessert wines go well with cheeses, fresh fruit or chocolate sweets, taking the colour and flavour of the vintage into account.
